Flourless Chocolate Peanut Butter Cookies - A Guilt-Free Treat

I’m a little chocolate obsessed (if you hadn’t noticed 😉), so when I found this recipe for flourless chocolate peanut butter cookies, I knew I had to try it. And let me tell you - they are the ultimate guilt-free treat! 🍫🥜
The best part? They’re flour-free, packed with protein and healthy fats from peanut butter, and still taste utterly indulgent. I also made a little hack: the original recipe suggested over 100g of coconut sugar, but I halved it, and they were still perfectly sweet. This is a tip I use for almost any high-sugar recipe, you can usually cut it by at least half without losing flavour.
Ingredients
2 Eggs
50g Coconut Sugar
250g Smooth Peanut Butter
30g Butter (melted)
10ml (2 tsp) Vanilla Extract
25g Cocoa Powder
5g (½ tsp) Baking Soda/Bicarb
Pinch of Sea Salt (plus optional flaky salt for garnish)
150g Dark Chocolate Chips
Method
Preheat the oven to 175ºC (fan-assisted) and line a baking sheet with parchment paper.
In a large bowl, whisk together the eggs and sugar until very smooth.
Add the peanut butter, melted butter, and vanilla extract. Whisk until fully combined.
Mix in the cocoa powder, baking soda, and salt using a spatula until just combined. Fold in the chocolate chips.
Scoop about two tablespoons of dough per cookie and form into balls. Place on the baking sheet and flatten slightly with the back of a spoon. Leave space between cookies.
Bake for 7–10 minutes. Let them cool for 10 minutes before transferring to a cooling rack.
