Matcha Energy Balls

For all the matcha lovers, this one's for you! Combining the sweetness of dates with the bitterness of matcha, this really works! You can use any nuts you fancy but I went with pistachios, almonds and walnuts here for healthy fat and gut microbiome benefits. Matcha contains EGCG, an antioxidant which supports fertility and L-theanine which provides calming affects alongside a little energy boost from the caffeine. This a good option to swap out your afternoon coffee for when your energy levels start to flag. Enjoy this one lovelies!





INGREDIENTS

9 Medjool Dates (175g pitted or 180g with stones)

250g Mixed Nuts - I used 100g wanuts, 100g flaked almonds & 50g pistachios

2 tbsp nut butter

1 tbsp matcha powder plus more for dusting (if desired)

Pinch of sea salt


METHOD

  1. Add all of your ingredients to a food processor, and blend until fully combined.

  2. Roll into medium sized balls and then dust with more matcha if you fancy it! Enjoy!
