Ingredients
80ml coconut oil, melted
170g nut butter, divided
60g maple syrup
1 tsp vanilla extract
160g oats
120g oat flour (blend your own!)
Pinch of sea salt
200g dark chocolate
Method
Line a baking dish with parchment paper and set aside.
In a large bowl, whisk together half the nut butter, coconut oil, maple syrup, and vanilla.
Add the oats, oat flour, and salt. Mix until the oats hold together when pressed.
Press the mixture into the prepared dish in an even layer. Freeze for 15 minutes.
Melt the dark chocolate using a double boiler or microwave (in 30-second bursts). Mix in the remaining nut butter until smooth.
Pour the chocolate mixture over the chilled oat base, spread evenly, and sprinkle with a few oats on top. Freeze for up to 1 hour until set.
Slice into bars and enjoy!
