Tired of store-bought protein or oat bars that are loaded with sugar and preservatives? These Chocolate Fudge Oat Bars are the perfect homemade alternative- rich, chewy, chocolatey, and surprisingly nourishing. Each bar packs 8g of protein and 4g of fibre, making them ideal for breakfast on-the-go, post-workout fuel, or a guilt-free snack.

Why you’ll love them

Not only do these bars satisfy chocolate cravings, but they also provide:

  • Sustained energy - oats and nut butter release carbs slowly

  • Protein to support muscles - helping you feel fuller for longer

  • Healthy fats - from nut butter supporting brain and hormone health

And the best part? You know every single ingredient that goes in, no hidden sugars or preservatives.

Ingredients

  • 80ml coconut oil, melted

  • 170g nut butter, divided

  • 60g maple syrup

  • 1 tsp vanilla extract

  • 160g oats

  • 120g oat flour (blend your own!)

  • Pinch of sea salt

  • 200g dark chocolate

Method

  1. Line a baking dish with parchment paper and set aside.

  2. In a large bowl, whisk together half the nut butter, coconut oil, maple syrup, and vanilla.

  3. Add the oats, oat flour, and salt. Mix until the oats hold together when pressed.

  4. Press the mixture into the prepared dish in an even layer. Freeze for 15 minutes.

  5. Melt the dark chocolate using a double boiler or microwave (in 30-second bursts). Mix in the remaining nut butter until smooth.

  6. Pour the chocolate mixture over the chilled oat base, spread evenly, and sprinkle with a few oats on top. Freeze for up to 1 hour until set.

  7. Slice into bars and enjoy!

Tips to make them even better

  • Choose a dark chocolate of 85% or higher for a lower-sugar option

  • Add a handful of seeds or chopped nuts for extra crunch

  • Store in the fridge or freezer to keep them firm and fudgy

These bars are the perfect mix of chocolate indulgence and nutrition, giving you a snack you can feel good about. They’re portable, easy to make in advance, and totally satisfying for anyone who loves a fudgy treat without the guilt.
