Buckwheat Banana Bread

This is a fantastic gluten free, dairy free and refined suar free banana bread that can be enjoyed on its own, with some nut butter or some yoghurt and fresh fruit for brakfast. Full of fibre and this version won't spoike your blood sugar levels.


Ingredients:

250g buckwheat flour

1 tsp GF baking powder

2 tsp ceylon cinammon

1 pinch sea salt

4 very ripe bananas, mashed

75g coconut sugar

60g coconut oil, melted

1 tbsp vanilla essence


Method:

Pre-heat oven to 180C (fan assited) and line a loaf tin with baking parchment. Add all dry ingredients to a large mixing bowl and mix well. Melt the coconut oil in a pan on a medium heat and then add this, along with the wet ingredients to the bowl. Fold ingredients until you get a sticky dough. Sppon the mixture into the loaf tin and bake in the oven for 50 minutes until a knife comes out clean. Allow to cool before enjoying.
